Have you ever loved a particular dish at a restaurant so much that you have never forgotten about it? I have. One dish in particular was the Garlic-fried Chicken at the now-shuttered Golden Dragon Restaurant in my hometown of Temple, Texas. It makes my mouth water just to think about it! I've tried garlic-fried chicken at other Chinese restaurants over the years and none came close to The Golden Dragon's fare.
Recently when Jim and I were in Austin, we stopped by one of my favorite little restaurants in the university area to have lunch, Hyde Park Bar and Grill. I've been going there for many years, and that little restaurant brings back memories of work colleagues, friends, and family enjoying a meal within its confines. Since it was a wet and chilly day I decided to try their famous lentil soup for the first time. It's advertised as being one of their most requested dishes. I'm a soup fan, but not really a lentil soup fan until this soup. From the first to the last taste of that soup, I was in love. I asked the waitress what in the soup gave it so much flavor. She whispered, "Beef broth."
The next day I Googled "Hyde Park Bar and Grill lentil soup" and got a hit. I tried it, substituting 2 cups of beef broth and 2 cups of vegetable broth for 4 of the 6 cups of water. I also added 1/2 cup of lemon juice. It was delicious, so I am added it to my recipe book and it will appear on my table during the winter months.
So I give you lentil soup. Make it on the next chilly, wet day and enjoy.
Hyde Park Bar and Grill Lentil Soup
1 lb dried lentils, ~2 1/2 cups (I use precooked, canned lentils.)
2 stalks of celery, chopped
1 med onion, chopped
2 carrots, slice thinly
2 cloves garlic, minced
16 oz can diced tomatoes
2 tsp cayenne
3 tsp chili powder
1 tsp cumin
1 tbsp salt
8 cups water (I substitute 2 cups of beef broth and 2 cups vegetable broth for 4 of the cups of water.)
(I add 1/2 cup of lemon juice at the end.)
Put all ingredients in a large pot. Bring to a boil. Reduce heat and cover. Simmer gently for about 45 minutes until lentils are tender. Stir occasionally. If it looks too thick, add water. Can be served with a dollop of plain Greek yogurt on top and cornbread alongside.
